SWEDISH Almond Cake

Swedish almond cake is a lifelong love for those who have tried it. And although the site already has recipes for this famous delicacy, I suggest also try my chocolate version!


egg white — 8 pcs.
sugar — 120 g.
flour almond — 200 gr.
salt — 1 pinch
egg yolk — 8 pcs.
sugar — 130 g.
cream (33%) — 200 ml.
Butter — 150 gr.
cocoa powder — 2 tbsp. l.
almonds (petals) — 70 gr.

Whisk the whipped with a pinch of salt until soft peaks. Gradually adding sugar, whisk the proteins to tight peaks.

Gently stirring the spatula, insert almond flour into the proteins. The dough is divided into two parts into two forms for a cake diameter of 26 cm.

Bake cakes in a preheated oven at 180 ° C for about 17-20 minutes. In the absence of two identical forms, you can bake cakes in turn, and for each cake you need to make a dough separately. One common cake can also be baked, but then it will be difficult to cut it into two parts, while increasing the baking time accordingly, so as not to overdry and top it off from inside.

For the cream, beat the yolks with half the sugar until a thick, light mass is obtained. Add half of the warm cream (100 ml.).

The rest of the cream should be heated in a saucepan with the rest of the sugar and stirring constantly, with a fine trickling of the egg mass. Liquid constantly stir and, heating it on the smallest fire, bring to a thickening. Here the main thing is not to let the cream burnt on the bottom.

Put a piece of food film on the cream and cool it. Soft butter thoroughly whisk, add a white sifted through a sieve of cocoa to the white mass. Then, gradually adding a spoonful of chilled cream, whisk until a very delicate chocolate cream is obtained.

In a hot, dry frying pan, fry the almond petals.

On the dish lay one cake, spread on a smaller half of the cream.

Cover with a second crust and grease the top and sides with the rest of the cream. Cream is obtained a lot, so it depends only on you, whether you will all smear it on the cake or leave a piece in order to indulge them, while the cake will freeze in the refrigerator! Sprinkle the cake with almond petals.

The cake is put in the refrigerator for about two hours. And then you can serve. Taste is indescribable!
