Strawberry cake-meringue 🍓

4 egg whites, room temperature
a pinch of salt
1/4 teaspoon citric acid
200 gr. small sugar
pink food coloring



strawberry, sliced
250 ml. cream 33%
powdered sugar for decoration

Preheat the oven to 120 degrees.
Put the egg whites in the bowl of the mixer and beat until a soft foam.
Add salt and citric acid and beat until soft peaks.
Gradually start adding sugar, spoon on the spoon, whisking after each addition, until the sugar dissolves and the glossy hard peaks are formed.
Add food color if desired.
Place the meringue in a confectioner’s bag equipped with a star-shaped tip.
Drain the dough in the form of pipes on a sheet of parchment paper.
Bake for 1.5 hours or until cooked.
Remove from the oven and allow to cool. Do not touch for a few minutes.
Then place in a sealed container until you are ready to serve.
Place chilled cream in a cooled mixer bowl and whip them until hard peaks are reached.
Place the whipped cream in the pastry bag.
Decorate the cream with two halves to place slices of strawberries on one of them, then fasten the halves.
Sprinkle with powdered sugar. Serve immediately.
