Raspberry chocolate cake

Ingredients:
RASPBERRY STYLE
1/4 cup (52 g) of sugar
1 tbsp. l. cornstarch
2 tsp. water
2 cups (225 g) raspberries *

 

CHOCOLATE BISCUIT
1 3/4 cup (228 g) of flour
2 cups (414 g) of sugar
3/4 cup (85 g) of natural unsweetened cocoa
2 1/4 teaspoon of soda
1/2 teaspoon baking powder
1 tsp. salt
1 cup (240 ml) of milk
1/2 cup (120 ml) of vegetable oil
1 1/2 tsp. extract of vanilla
2 large eggs
1 cup (240 ml) of hot water

CHOCOLATE CREAM
1 1/2 cups (336 g) unsalted butter, room temperature
350g semi-sweet chocolate, melted
5 teaspoons (35g) dark cocoa powder (Hershey)
6 glasses (690 g) of powdered sugar
1/2 tsp. salt
10-12 tablespoons (150-180ml) of creamy cream

CHOCOLATE GANASH
3/4 cup semi-sweet chocolate chips
3/4 Cups of fatty cream

PREPARATION:

FILLING
1. mix sugar, cornstarch and water in a medium-sized saucepan over medium heat and mix. Heat until the mixture becomes wet and the sugar begins to melt.
2. Add raspberries and mix to coat with sugar mixture.
3.Continue to cook until the raspberries begin to soften and release the juice. Use a spatula to stretch the raspberries.
4. Remove from heat when the raspberry juice begins to thicken, after about 5 minutes. Pour the mixture into another bowl and refrigerate until completely cooled.

BISCUIT:
5. Preheat oven to 180C and cook three 20cm baking dishes, grease and lay with parchment paper underneath.
6. Add flour, sugar, cocoa, baking soda, baking powder and salt to a large mixing bowl and mix. To postpone.
7.add milk, vegetable oil, vanilla extract and eggs to a medium-sized bowl and mix.
8. Add wet ingredients in the dry ingredients and whisk until smooth.
9. Slowly add hot water to the dough and mix at low speed until uniform.
10. divide the dough evenly between the prepared forms and bake for 22-25 minutes, or until the toothpick comes out with a few wet crumbs.
11. Remove the biscuits from the oven and allow to cool for 2-3 minutes, then put them on the grate to completely cool.

CREAM
12. Add the oil to a large mixing bowl and whisk until smooth.
13. Add the melted chocolate and mix until completely mixed.
14. Add the cocoa powder and mix until completely blended.
15. add about half of the powdered sugar, salt and half of the cream and mix until homogeneous.
16. Add the remaining powdered sugar and mix until smooth.
17. Add the remaining cream as needed to obtain the desired consistency of the cream.

Ganache & Ornament of Cake
18. Add the chocolate chips to a medium-sized bowl.
19. Heat the fat cream in the microwave before starting to boil. Watch them, because it happens quickly.
20. Pour the hot cream on the chocolate and leave for 2-3 minutes, then whisk until smooth. To postpone.
21.line the biscuits with a knife.
22. Place the first cake on a plate or on a cardboard circle cake.
23. Using a bag and nozzle, apply the cream around the edges of the biscuit.
24. In the center lays 1/4 ganasha.
25. Spread a spoonful of raspberry filling on ganache and distribute.
26.add a second layer of biscuit, then repeat steps 23 through 25.
27. Add the third and last layer of the cake from the top.
28. Cover the top and outside of the cake with the remaining chocolate cream.
29.Use the remaining chocolate ganache, pour the cake on top, forming chocolate stains, then fill the center. If the ganache has become a little hard, just warm it up for a few seconds in the microwave again.
30. Using a pastry bag and nozzle, decorate the remaining chocolate cream cake. Use confectionery powder or decorate as desired.

Cool the cake until ready to serve. The cake is best served at room temperature, stored in a refrigerator for 4-5 days, in a sealed container.
