Black currant in syrup:
200 ml of water

8 egg yolks
240 g of fine sugar
6 egg whites

chocolate ganache with black currant:
2 g of gelatin
300 g of black currant (fresh or thawed)
70 ml of water
80 ml liqueur cream de cassis
25 g of fine sugar
10 ml of lemon juice
250 g dark chocolate (70% cocoa)
225 g butter, room temperature

Ganache for covering:
150 g of dark chocolate (70% cocoa)
10 g of cocoa powder
150 g cream 33%


Black currant in syrup:

Water, adding sugar, bring to a boil. Pour the boiling syrup over the berries. Leave them soaked until the next day.

Chocolate ganache with black currant:

Chop the chocolate and melt it in a water bath.
