For biscuit
• 170g butter of room temperature
• 135g of granulated sugar
• 140g of brown sugar
• 2 eggs at room temperature
• 2 tsp. vanilla extract
• 226g buttermilk room temperature
• 110g of room temperature sour cream
• 2 tablespoons of brewed coffee
• 220g flour
• 85g of cocoa powder
• 1 ½ teaspoon of soda
• ½ teaspoon of salt

For cherry syrup
• ½ cup of granulated sugar
• ½ cup of water
• 2 teaspoons of cherry extract (if possible, use Kirsch, then its)

For chocolate cream
• 4 egg yolks
• 3 tablespoons cornstarch
• 2 glasses of milk
• ½ cup of granulated sugar
• A pinch of salt
• 1 teaspoonful extract
• 170g melted chocolate
• 2 tablespoons butter of room temperature

For decoration:
• 226g of chocolate chips
• 300g of creamy cream
• 85g of powdered sugar
• 1 tsp. Vanilla extract
• 220g of pitted cherries
• 7pcs of fresh cherries

LIST BISKVIT:
1. Preheat the oven to 180 degrees, grease the baking paper.
2. Mix the butter and sugar until light (5 minutes at medium speed). Add one egg at a time, mixing each time. Add the vanilla extract.
3. In a separate bowl, whip together buttermilk, sour cream and coffee. in another bowl, sift together the flour, cocoa, salt and soda. In the buttermilk, add a quarter of the dry mixture and mix at a low speed. So add the rest of the flour, each time stirring. Mix the dough until ready with a spatula.
4. pour the dough on a prepared baking sheet, bake for 15-18 minutes. Biscuit is ready when the toothpick comes out with a few wet crumbs.
5. Biscuit can be stored for several days in a refrigerated or frozen form.

PREPARING A SYRUP
Mix sugar and water in a small saucepan over medium heat. stir until the sugar dissolves. Bring the syrup to a boil and remove from heat. Cool to room temperature and add the cherry extract. The syrup can be stored for a week at room temperature.

READY FOR CHOCOLATE CREAM.
1. in a medium bowl, whisk together the yolks, cornstarch and half the sugar. In a medium saucepan, mix the milk, the remaining sugar and salt.
2. Heat the milk over medium heat until boiling. Start to beat the egg mixture, adding a little hot milk. continuously whisk together, mix together the milk and egg mixture.
3. Return the saucepan to the burner and heat the mixture by whisking constantly. Using a rubber spatula, periodically pass through the bottom of the pan to prevent your cream from burning. Cook the cream for 2 minutes after thickening. remove the pan from the heat and add the melted chocolate. Stir the cream until it is uniform.
4. Add the vanilla extract and butter, whisk again.
5. Wipe the cream through a sieve in a bowl with a spatula. So you will get rid of the slightest egg clots.
6.cool the cream for 2 hours.

ASSEMBLING AND DECORATION
