Lemon cake

Luxurious three-layer lemon cake made from soft cakes, sandwiched with two different creams.

Before applying creams, allow the cakes to thaw for 2 hours. After assembly, the cake should stand for at least an hour, so that the cream is frozen and the cake soaked.

Ingredients for biscuit:

— 250 g butter (softened)
— 250 gr of fine crystalline sugar
— 4 eggs
— 350 gr of flour
— 1 teaspoon baking powder
— juice and grated rind of 2 lemons

for lemon cream:
— 75 g of fine crystalline sugar rind
— juice of 1 lemon
— 2 eggs
— 50 g of butter


Mix sugar with lemon zest in a medium-sized heat-resistant bowl. Separately, beat eggs with lemon juice and pour into lemon sugar. add oil cubes, put on a hot water bath. Cook the cream, stirring gently until oil dissolves, the mass becomes uniform and begins to thicken. Ready cream should leave a trace on the back of the spoon. Remove from heat and cool.

For apricot glaze:
— 6 tablespoons apricot jam
— 6 tablespoons water

For oil cream:
— 150 g of butter (softened)
— 450 gr of powdered sugar (sift)
— yellow food color
— decorative baking powder

How to make cakes and creams:
