Fruit biscuit cake

For biscuit:
-4 eggs
-1 tbsp. Sahara
-1 tbsp. flour
-vanillin
— a pinch of salt and citric acid

For cream:
-500 ml of sour cream
-1 tbsp. Sahara
-vanillin
-30-40 g gelatin + 0.5 st. water (the more juicy fruit, the more gelatin!)
-Fruit. I have kiwi, banana, orange and strawberry.

Prepare a biscuit. Separate the proteins from the yolks and whip with a pinch of salt and citric acid into a steady lush mass. Beat first at a low speed (until a good foam appears), then gradually increase the speed to maximum, adding sugar in small portions.
Now beat the yolks with sugar and vanilla until the mass is fluffy and light. Add a little flour to the yolks (somewhere 1 / 4-1 / 3) and then beat up (mix). Now gently intervene (wooden spatula) of protein and then the remaining flour. Movements with mixing should be very accurate (as if lifting the dough from the bottom upwards).
Prepare the form. At the bottom of the form we put oily paper for baking. The walls of the mold are lubricated with oil. Some say that the oil makes it difficult to lift the biscuit, but I think that it’s easier for him to get up in oil. But you do as you used to … you can also close the walls with paper.
I have a biscuit for about an hour at 180 grams. Oven can not be opened!

Ready biscuit to get out of the mold, cool, cut off the lower part (1 cm in height). Cut the rest into small cubes.
Soak gelatin in water for 30-40 minutes. Form for cake to mop food film. Cut the fruit into slices and beautifully lay on the walls of the mold. Cut the remaining fruit into small cubes. Beat up sour cream with sugar and vanilla until creamy. Heat up, dissolve gelatin (not boiling). Gelatin mixed with sour cream, sprinkled with fruit and biscuit cubes. Quickly, but gently mix and put in a prepared form. Top cover with a biscuit puff, a little crushing it. Close the cake with the hanging edges of the film and put it in the refrigerator (preferably at night). Then open the edges of the film, cover the cake with the dish (on which it will be served) and turn over so that the cake shape is on the dish. Carefully remove the mold and film.
