● eggplant 1 pc.
● zucchini 2 pcs.
● cherry tomatoes 10 pcs.
● green beans 1 bundle
● Carrots 1-2 pcs.
● potatoes 3 pcs.
● Olive oil 4 tbsp.
● Italian herbs 1 tsp.
● salt to taste
● ground pepper to taste
● lemon juice 1 tbsp.


1. Wash and cut vegetables: cut the potatoes into slices, cut the tomatoes in half. Carrots cut into rings, eggplant and zucchini — half rings. Cut the bean string into several parts.
2. In a large bowl, mix the olive oil, herbs and lemon juice. Add the vegetables and mix well, so that they are evenly covered with oil.
3. Put the vegetables on a baking sheet or in a deep form, cover with foil. Bake at 200 degrees until soft — about 40 minutes.
