Chocolate-raspberry cake

Light, crimson cake with chocolate mousse and cheese.

Biscuit:

Chocolate mousse:

* 1 heaped teaspoon of gelatin

* 3 tablespoons of boiling water

Raspberry jelly:

* 400 g raspberries
* 1 raspberry jelly

* 250 ml of boiling water

Weight of cheese:

* 800 grams of homogenized cheese

* 2 raspberry jelly

* 300 ml of boiling water

* 2 tablespoons of powdered sugar

Egg and sugar whisk in a light, fluffy mass, into which we add water and flour sifted with cocoa. dough pour into a baking dish with a diameter of 22 cm and put in the oven heated to 180 degrees. Bake for 15 minutes, then leave until completely cooled.

100 ml of whipped cream is heated in a small saucepan and when the cream begins to evaporate, remove it from the heat and add finely chopped chocolate. stir until the chocolate dissolves, and then add the gelatin dissolved in warm water to the hot chocolate. Chocolate should be left to cool, stirring occasionally.

When the chocolate reaches room temperature, whip the remaining fondant with the cream and add it to it. pour mousse on a cool biscuit and put it in the refrigerator for about 2 hours.

Jelly dissolve in boiled water and pour it frozen earlier raspberries. Mix until the jelly starts to harden, then pour it with the cooled mousse and put it in the refrigerator for another 2 hours.

Melt the jelly in boiled water and cool to room temperature, then combine it with cold cheese and powdered sugar. when the mass starts to harden (too liquid leaking through the bottom of the mold), pour it onto the biscuit, making sure it fills the space between the biscuit and the mold walls
