Chocolate cake with raspberry mousse and mirror glaze


For chocolate cake:

130 g. wheat flour

160 g. small sugar

55 g. cocoa

1 teaspoon of soda

1/2 teaspoon baking powder

a pinch of salt

125 ml. kefir, or sour cream 12%

60 ml of vegetable oil

1 large egg

vanilla extract 1 teaspoon

125 ml. freshly prepared hot coffee (espresso)

Raspberry mousse:

450 ml. fat cream 33%, refrigerated

750 gr. raspberry (fresh or frozen)

juice of half a lemon

150 gr. Sahara

20 gr. gelatin (powder 5 teaspoons) or 5 sheets of gelatin

mirror Chocolate glaze:

150 gr. Sahara

50 ml of water

50 gr. cocoa

100 ml. cream 33%

2 teaspoons gelatin (8 g.)

All the ingredients for the dough should be at room temperature.

In a large bowl, sift flour, sugar, cocoa, soda, powder, salt.

in a large bowl, put buttermilk (kefir or sour cream), butter, eggs, vanillin.

Mix the mixer at a low speed just to mix the ingredients. Add the dry ingredients and mix quickly. Slowly add hot coffee stirring constantly.

Dough to put into a split form 20 cm in diameter, covered with parchment paper.

Bake in a preheated oven at 175 ° C for about 35 to 40 minutes or so, until a so-called dry stick. Get it and let it cool.

Put chilled cream into the mixer bowl and beat until hard peaks. Add the mashed raspberry puree. Stir the broom carefully, but carefully.

Gelatin pour a little cold water to cover, leave it to swell.

Place the sugar in a saucepan, add water, bring to a boil to dissolve the sugar. Add cocoa, cream, mix to combine and bring to a boil.

Do not mix for too long and do not beat — so that air bubbles do not appear.

Pour through a sieve to get rid of the lumps. Add a very hot mixture to the swollen gelatin, stir until dissolved.

pour the cake when the glaze cools — preferably place in the fridge, all the while controlling its density — at the right time, get it out of the fridge.

If the glaze thickens too much if it needs to be heated in a microwave or in a water bath.

prepare the icing before decorating the cake.

Prepare a detachable shape with a diameter of 23 cm to cover the bottom with parchment paper.

Place the first layer of cake on the bottom of the mold. Top half of the raspberry mousse.

place in the refrigerator for a while, to freeze, although this is not necessary (the rest of the mousse should be left at room temperature, making sure it does not freeze).

then get the form from the refrigerator, put a slightly more layer of the cake on a slightly frozen mousse and cover with the rest of the raspberry mousse.

Align the layer and place in the refrigerator, preferably at night. Chilled cake is taken from the refrigerator, removed from the mold and placed on a serving dish.

pour the mirror chocolate coating.

Keep refrigerated.
