Chocolate banana cake

Chocolate and banana — a perfect combination, solid endorphins! Banana crust and chocolate mousse — it turns out a very simple and delicious cake.


(the first time I did in the form of 20 cm and cut the cake in half, the second time I took 2/3 of the ingredients, did in the form of 17 cm and cut the cake into three parts)
(measuring everything in cups is a standard American measure, one cup = 236 ml)


55 g butter, room temperature
3/4 cup of sugar
0.5 tsp vanilla extract
1 egg
0.5 cups of chopped bananas (bananas should be taken ripe or very ripe, I took half a cup out of one and a half bananas)
1 cup of flour
1 tsp baking powder
1/4 cup sour cream
1/3 tsp soda
1/4 tsp. salt


80 g of sugar
50 ml of water
2 tablespoons cognac or rum


120 g chocolate (I took a mixture of bitter and dairy, but it’s your taste)
190 g cream (35%)
2 tablespoons bananas
1 tbsp. cognac or rum


Lubricate the form with oil and sprinkle with flour (I’m still laying paper for baking on the bottom, it must also be greased and sprinkled with flour). Preheat the oven to 180 degrees.
Sift flour, baking powder and salt. Set aside. Mix sour cream and soda. Set aside.
carefully beat up butter and a half of sugar. The weight should be pretty fluffy. Continue to beat, add the rest of the sugar and vanilla extract. Then add the egg. Continuing to beat, gradually add flour mixture and bananas, alternating. In the end add sour cream.
pour the dough into a mold, bake it for 30-35 minutes or until the toothpick leaves it wet (if crumbs stick on it — that’s fine). Cool in the form for 20 minutes, then remove from the mold and cool completely.


Bring water with sugar to a boil, cool, add cognac or rum.


Chop the chocolate into small pieces. 120 g of cream to bring to a practical boil, pour the chocolate. Let stand a minute. Mix with a submerged blender (do not shake, it is necessary that the mass becomes smooth and shiny). Add the remaining cream, bananas and cognac / rum, mix again with a blender. put in the refrigerator for a couple of hours.


Biscuit cut into two or three pieces, depending on the height. Each part soak with syrup (not too much). Lower the bottom with a cream, put the next, if necessary, repeat, close the upper cake. cover the cake with cream on all sides. Further, either decorate the top with bananas and cream, or cover with a mirror glaze.
If you decorate with bananas, they should be lubricated with neutral glaze. I take the remaining syrup from the impregnation, heat it, soak a little gelatin (somewhere a teaspoon or less), dissolve the gelatin in the syrup, cool it and then lubricate the bananas.
I personally liked the option with a mirror glaze.

Chocolate glaze:
75 ml of water
125 g of powdered sugar
50 g of unsweetened cocoa powder
75 g sour cream
7 g of gelatin
25 g of butter
Soak gelatin in cold water and let it swell.

Place the water, sugar powder, cocoa and sour cream in a small saucepan and stirring, bring to a boil. In the glaze there should be no lumps.
Remove from heat, add the swollen gelatin and stir until it dissolves. Cool the mixture to 40C, then add butter. Again, mix well.

Before glazing cake is better to put in the freezer for half an hour-hour. then put it on the palm of your hand and generously pour glaze to make it glass on all sides.
