Cake with tender soufflé and pineapple

Appetizing cake with a delicate yoghurt soufflé and canned pineapple will become a real decoration of the festive table. Air biscuit, refreshing soufflé with pieces of jelly and fruit, and on top gentle chocolate ganache — what can be more delicious? It is not difficult to cook at all. The only thing is to stock up time so that the soufflé and ganache can cool down and freeze.

Ingredients for biscuit:
— chicken eggs — 4 pieces;
— sugar — 140 g;
— Wheat flour — 120 g;
— cocoa powder — 20 g;
— refined sunflower oil — 30 ml;
— water (boiling water) — 2 tbsp. l .;
— vanillin — 1 g.

Ingredients for souffle:
— sour cream with a fat content of 20% — 250 g;
— thick yogurt — 200 ml;
— sugar — 140 g;
— gelatin — 15 g;
— jelly ‘Kiwi’ — 1 sachet;
— canned pineapple — 540 g.
Ingredients for ganache:
— black chocolate — 100 g;
— cream — 100 ml.

Preparation time — 20 minutes.
Cooking time — 280 minutes.
Number of servings — 10.


First we prepare the jelly. Combine it with 200 ml of hot water and mix thoroughly, so that the gelatin is dissolved. Then we pour jelly into dry dishes, cover with food film and put it to freeze in the refrigerator.

Now let’s biscuit. In a separate vessel, we combine sifted flour, cocoa and vanillin. We mix the mixture with a whisk until it is uniform.

In a deep dish, we connect four chicken eggs and sugar. We will whisk the mixture for 10 minutes, so that the mass increases in volume and brightens.

Without stopping to whip, we pour into the egg mixture vegetable oil.

In the same way, we pour a thin stream of steep boiling water into the dough.

In two steps, we introduce into the dough a mixture of flour and cocoa.

Gently mix the ingredients to get an airy homogeneous dough.
For a baking dish with a diameter of 22 cm, grease with butter and sprinkle with flour. Pour into it ready-made dough for biscuit, level it with a shovel.
We will bake the biscuit until ready for 20-25 minutes at a temperature of 180 degrees. Completely cool it in the form, after which we transfer it to the cutting board and trim it by cutting off the tip.

For the soufflé, we combine sugar, sour cream and yogurt in the bowl. Mixer we’ll take the ingredients to homogeneity.

Gelatin mixed with 60 ml of cold water. We mix it and let it brew and swell for 10 minutes. Then we will dissolve it in a water bath and add it in the soufflé.

Dice the jelly from kiwi and part of the canned pineapple.

Add them in the souffle and gently mix everything.

The sides of the detachable shape with a diameter of 22 centimeters are covered with acetate film or wrapped with a food film. At the bottom of the form, lay out a ready-made cold biscuit. We impregnate it with juice from canned pineapple. On the perimeter of the form, lay out the half-rings of pineapple, as in the photo.

In the middle we will lay out the yoghurt souffle, level it with a shovel. We will send the workpiece to the refrigerator for 2 hours, so that the souffle is frozen.

Prepare the ganache. Black chocolate is finely chopped with a knife and filled with hot cream. We mix the ingredients so that the chocolate melts completely and combines with the cream.

Fill the cooled cake with ganache and send it to the refrigerator for an hour, so that it stays frozen, too.

We will take the finished cake out of the split form, cut into portions and serve with tea or coffee.
