CAKE with strawberry mousse

INGREDIENTS
Ingredients
Biscuit:
-Eggs of room temperature — 6 pieces
-Muka-130 g
-Cracked potato-15 g
-Sugar-160 g
-Cream butter — 50 g
-Chocolate white — 50 g
— Disintegrator — 1 tsp.


Strawberry mousse:
-Clubber — 450 g (I have a frozen one)
— Cream — 250 ml (33%)
-Jelatin — 1 tbsp. with slide (18g)
-Sugar to taste — (I have 10 tablespoons)
-Sugar powder — 2-3 tbsp. spoons
Cream:
-Clubber — 500 g (I have a frozen one)
-Sugar — 4 tbsp. spoons — (I have 10 tablespoons)
-Corn starch — 2 tbsp. spoons
-Egg — 1 piece
-Cream 33% — 200 ml
-Sugar powder — 1 tbsp. a spoon
In addition, a baking dish with a diameter of 20 cm (heart inside, consists of two parts).
Shape the forms with butter, sprinkle with flour or semolina, cover the sides with baking paper.

COOKING METHOD

Biscuit:

Melt butter and chocolate on a steam bath, cool.

Eggs and sugar put on a slow fire and constantly interfering with the whisk to heat up to 30 C. Remove from the heat and beat the mixer at maximum speed, whisk for at least 15 minutes .The mass should increase greatly in volume, be lush and stable.

Sift together the flour, starch and baking powder, add to the beaten mass 1/3 of these ingredients, gently mix the spatula by the method of folding from bottom to top and in a circle.

To this mass, add carefully half of the chocolate-oil mixture, pouring in a circle, stir.

Then add again 1/3 of the dry ingredients, mix, add the remaining chocolate-oil mixture, mix and add the rest of the dry ingredients, mix thoroughly.

Pour the dough into prepared forms. Bake 10 minutes at 180 *, lower the temperature by 5 *, bake for 5 minutes, and after 5 minutes, reduce to 170 * and bake for another 20 minutes, check the readiness of the wooden beak, toothpick, if it’s dry, the cakes are ready (baked immediately in two forms). After baking, leave the contents in the forms for cooling in a slightly opened oven, then take them out of the mold to the cutting board for complete cooling.

Strawberry mousse:

Soak gelatin in 3 tbsp. l. cold boiled water for 30-40 minutes.

Strawberries should be thawed and crushed with a blender in puree. Add sugar to taste.

Swollen gelatin to dissolve in a water bath, not letting it boil. Slightly cool and add to the strawberry puree, mix well.

Beat cream with the addition of powdered sugar in a persistent foam.

Add in them two tablespoons of strawberry mixture and gently, with movements from the bottom up, mix. Then add the rest of the mashed potatoes and mix them neatly until smooth.

Cream:

Strawberry defrosted, crushed with a blender in puree, placed in a pan with a thick bottom, add sugar, egg and starch, mix well and simmer until thick, completely cool.

Cream beat with sugar powder until firm peaks and combine with strawberry cream, mix until smooth.

Cake assembly:

In the cooled sponge cake with a spoon lay the strawberry mousse in the cavity of biscuit, put in the refrigerator to freeze the mousse, collect the cake by inverting the upper level to the lower layer, apply the cream on the surface and sides of the cake, decorate to your liking. I decorated with whipped cream (200 ml + 2 tablespoons of powdered sugar) and sugar pink peas.
