Cake «Loved» with kiwi and tender soufflé

Biscuit:

6 eggs
1 cup of sugar
1 cup of flour

Cream:

Cottage cheese 9% — 300 g
Sour cream 20-25% — 300 g
Sugar powder — 1 tbsp. a spoon
Condensed milk — 3 tablespoons

Souffle:

Gelatin — 1 tbsp.
Proteins — 3 pcs.
Sugar — 0,5 cups
Citric acid / lemon juice — 1 tsp.

for decoration: three medium kiwi, jelly for cake (sold in the market and in culinary stores).

Before you start cooking, gelatin soak in cold water.

Biscuit:

Separate the proteins from the yolks. We beat the proteins with sugar in a strong foam, gradually introduce the yolks. Beat for 2-3 more minutes. we remove the mixer, we gradually introduce flour, stirring the spatula from the top down. We spread the dough into a form, covered with parchment, bake for 30-35 minutes, we check the readiness with a fork or toothpick.
Another warm biscuit cut into two identical parts, we cool. We impregnate with syrup.

Cream:

in one container we beat up sour cream with powdered sugar, in the other — we rub cottage cheese with a blender, adding condensed milk. For one spoon, add cottage cheese in a container with sour cream, grate with a spoon. We clean the refrigerator for 20-30 minutes.

Souffle:

whisk together the chilled proteins for about 10 minutes, adding lemon juice or acid. On the water bath we sweat the swollen gelatin — as soon as it dissolves completely, remove it from the plate, pour it into the squirrels in a thin stream, and beat for another minute 2.

in the deep form we put one half of a biscuit, we fill in the soufflé (it needs to be done quickly, freezes instantly), we put the other half on top, we squeeze it a little with the palm of the hand, and we flatten it. We put it in the refrigerator for 30 minutes.

After 30 minutes we take out the biscuit, put it on the plate. we cover with the cooled curd cream. We spread the cut fruits, cover the jelly (act according to the instructions on the package). The remains of the cream are used for decoration.

We clean in the refrigerator for at least 3 hours, preferably at night.
