Cake «Esterházy» 🍰

● 3 tbsp. l. flour
● 1 glass of sugar
● 8 egg whites
● 200 g of peeled walnuts
● 2 tbsp. l. apricot jam
● 0.75 cups of sugar
● 4 egg yolks
● 0.5 cups of milk

for the cakes take 3 tbsp. l. flour, 1 glass of sugar, 8 egg whites, 200 g of peeled walnuts (can be replaced with almonds if desired), vanilla or cinnamon if desired. For cream, 300 g of butter, 3 tsp. vanilla sugar, 0.5 cup coconut milk, 2 tbsp. l. apricot jam, 0,75a glass of sugar, 4 egg yolks, 0.25 cups condensed milk, 0.5 cups of milk.if desired, cherry vodka or liqueur (a couple of tablespoons) is added.

For the glaze you need white (200 g) and black (50 g) chocolate, cream 33% — 2 tbsp. l. To cover the cake you need almond chips (flakes). Prepare the dough. To do this, whip the whites into a foam, gradually adding sugar. whisk until the mass is so thick that it stops pouring out of the bowl. Nuts are ground into flour. Add to the proteins. In the cooled cream, add butter, whipped with condensed milk, beat thoroughly. Add liquor or vodka if desired. Cream chilling. We assemble a cake. 5 cakes smeared cream, and on the sixth from above apply a thin even layer of jam. Melted white chocolate with cream on a water bath and cover the cake on top and sides. Slightly cool the cake to make the chocolate a little thick.

Now the black chocolate is melt in a water bath with the addition of cream. Put it in a pastry bag and draw a spiral pattern on top of the cake. Then with a toothpick or knife point make a center of the cake out to the edges of the 8 rays. Then, on the contrary, make 8 rays from the edges to the center. the typical feathers turned out.
